A warm, scoopable chocolate chip cookie with crispy golden edges and a soft, gooey center.

Ingredients

Dough
  • 2 1/2 Tbsp (35g) unsalted butter, cold
  • 3 Tbsp (25g) light brown sugar
  • 2 tsp (6g) granulated white sugar
  • 1 egg yolk
  • 1/4 tsp vanilla (extract or paste)
  • 1/3 cup (40g) all purpose flour
  • 1/8 tsp baking soda
  • 1/8 tsp salt
  • 2 Tbsp semi sweet chocolate chips
  • 1-2 squares (15-30g) semi sweet chocolate chunks

Instructions

Instructions
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small saucepan over medium heat, melt the butter, stirring continuously until it develops golden brown milk solids and an amber color, about 5 minutes. Remove from the heat and let cool for 1–2 minutes.
  3. In a medium bowl, combine the brown butter, brown sugar, and granulated sugar, stirring until well incorporated.
  4. Add the egg yolk and vanilla extract. Mix until smooth.
  5. Add the flour, baking soda, and salt. Stir until a soft cookie dough forms.
  6. Fold in the chocolate chips and chocolate chunks, reserving a few chunks to place on top of the cookie.
  7. Transfer the dough to the prepared baking sheet. Press the remaining chocolate chunks into the top.
  8. Bake for 9–11 minutes, or until the edges are set and lightly golden while the center remains soft. For an extra gooey center, bake toward the shorter end of the time range.
  9. Serve warm with a scoop of vanilla ice cream and enjoy!

Notes

Note: For the best and most consistent results, I recommend measuring your ingredients by weight using a kitchen scale. Measuring by grams is more accurate than using cups and helps ensure your cookie turns out perfectly every time!
