Single Serve Brownie Skillet
This tiny brownie skillet is everything you want in a brownie, just in a perfectly portioned size! Inspired by my crackly top, Betty Crocker style brownie recipe, it has that irresistible crackly top, rich chocolate flavor, and a gorgeously gooey center. The perfect little dessert when you’re craving something warm, fudgy, and completely indulgent.
Ingredients
- 2 Tbsp (28g) unsalted butter, melted
- 2 tsp (10mL) canola or other neutral oil
- 3 Tbsp (45g) granulated sugar
- 1 Tbsp (15g) brown sugar
- 1 egg yolk
- ¼ tsp vanilla extract
- 2 Tbsp (16g) unsweetened cocoa powder
- 2 Tbsp (20g) all purpose flour
- ⅛ tsp salt
- Chocolate chips or chunks, for decorating
Instructions
- Preheat the oven to 350°F. Grease a 5 inch cast iron skillet.
- In a medium bowl, whisk together the melted butter, oil, granulated sugar, and brown sugar.
- Add the egg yolk and vanilla. Whisk vigorously for 2 minutes, until the mixture is fluffy and glossy. (Do not skip this step, a full 2 minutes gives you the crackly, shiny top!)
- Sift in the cocoa powder, flour, and salt. Gently fold until just combined, being careful not to overmix.
- Transfer the batter to the skillet and bake for 12 minutes, or until the crackly top is set and the center is still slightly gooey.
- Let the brownie cool for a few minutes, as it will continue to set slightly.

FAQs & Troubleshooting Tips
Why didn't my brownie get a crackly top?
The key is whisking the melted butter, sugars, egg yolk, and vanilla vigorously for the full 2 minutes. This step helps create the signature shiny, crackly brownie crust, so don't rush it!
Can I make this without a cast iron skillet?
Absolutely! You can use a small oven safe baking dish or ramekin of a similar capacity (see my Betty Crocker Inspired Brownie Recipe). Keep an eye on the baking time, as it may vary depending on the size and material of your baking dish.
