It’s just the right size for one, making it the perfect little treat when you’re craving something bright, sweet, and homemade without committing to an entire loaf.

Ingredients
Loaf Batter
- 1 egg yolk
- 2 Tbsp (24g) granulated sugar
- 1 Tbsp (14g) unsalted butter, melted
- 1 Tbsp (14g) sour cream
- 1 Tbsp (15mL) lemon juice
- 1⁄4 cup (30g) all purpose flour
- 1⁄4 tsp baking powder
- 1⁄8 tsp salt
Lemon Vanilla Icing
- 4 Tbsp (36g) powdered sugar
- 1 tsp lemon juice
- 1⁄4 tsp vanilla
Instructions
Lemon Loaf
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together the egg yolk and sugar until the mixture becomes pale and slightly fluffy.
- Whisk in the melted butter, sour cream, and lemon juice until smooth and fully combined.
- Sift in the flour, baking powder, and salt.
- Gently fold the dry ingredients into the batter until just combined.
- Pour the batter into an 8 oz ramekin and bake for 18–20 minutes, or until the top is lightly golden and a toothpick inserted in the center comes out clean.
Lemon Icing
- In a small bowl, whisk together the powdered sugar, lemon juice, and vanilla until smooth.
- Once the lemon loaf has cooled completely, pour the icing over the top.
- Serve and enjoy!
