The Best of Both Worlds: Brownie Meets Cookie

If you love the rich, fudgy center of a brownie but crave the chewy edges of a cookie, this single serve brownie cookie is the best of both worlds. Made with simple ingredients and plenty of chocolate, it bakes up with a crackly top, soft gooey center, and a sprinkle of flaky sea salt for the perfect finishing touch. It’s an easy dessert for those nights when you want something deeply chocolatey without making an entire pan of brownies.


Ingredients

  • 2 tbsp (28g) unsalted butter, cold

  • 2 oz (56g) semi sweet chocolate, chopped 

  • 2 tbsp (24g) granulated sugar

  • 1 tbsp (13g) light brown sugar

  • 1 egg yolk

  • ½ tsp vanilla extract

  • ¼ cup (30g) all purpose flour

  • 2 tbsp (10g) unsweetened cocoa powder

  • ⅛ tsp baking powder

  • ⅛ tsp salt

  • 1-2 tbsp semi sweet chocolate chips, (as a mix in)

  • Pinch of flaky sea salt, (for finishing)

Directions

  1. Preheat the oven to 350°F (175°C) and line a small baking sheet with parchment paper.

  2. Melt the butter and 2 oz dark chocolate together in the microwave in 20 second intervals, stirring until smooth.

  3. Whisk the granulated sugar, brown sugar, egg yolk, and vanilla into the chocolate mixture until smooth and glossy.

  4. Add in the flour, cocoa powder, baking powder, and salt. Fold gently until just combined.

  5. Stir in the chocolate chips.

  6. Chill the dough for 5-10 minutes.

  7. Form into a puck on the prepared baking sheet.

  8. Bake for 12-14 minutes, until the edges are set and the top is shiny and crackly.

  9. Sprinkle with flaky sea salt immediately after baking.

  10. Serve warm and enjoy!
